12 Days of Salads (142)

Okay, everyone knows December is prime time for all those cookie swaps, and the 12 days of cookies themes - all across the country. 

Well, I'm doing my own version:  The 12 Days of Salads

Care to add a yummy salad recipe?

I'll kick it off ...

Day 1:

Radish & Fennel Salad

Thinly slice about 1/2 lb of radishes.  Julienne (finely) a few fennel bulbs.  Toss these together in a large bowl , along with some chopped parsley.

Dressing:  2 parts lemon juice to 1 part olive oil, and salt & pepper to taste

Toss salad with dressing. 


Still going strong on The Spawn challenge ... I'm weighing in tomorrow.  I know something has majorly changed, because today my ring fell off ... twice.  On Monday, it fit normally and wouldn't even loosely turn, never mind slide right off my finger.  And you saw (a few posts ago), how big the jeans are that "fit" me.  They weren't that loose on Monday. 

I've been doing "The Allen" version of the challenge, just to change things up.  I've been strictly adhering to 1200 calories a day (nearly exactly) and drinking the max recommended fluid amount the challenged outlined for me.  Most of that in the form of water, but also a few diet colas tossed in there (I happen to prefer diet Pepsi).  The first few days were not the easiest, but I'm in the groove now. 

So, I am expecting to add to the one-pound loss I already noted on Day 140 (my 5-month diet anniversary date).   Tomorrow will tell me what exactly is going on with this plan.  Should be interesting.  Loose jeans (almost too big) and a ring I can't wear, after just 4 days?  I'll post the weigh-in results tomorrow.

  1. I LOVE this idea of 12 Days of Salads. I'm going to a cookie exchange tonight, I got roped into it. I made all my cookies, didn't eat a single one, and am planning on discarding of all the goodies I collect.

    That's amazing progress in Allan's challenge so far, congrats on the great work! I'm doing the 1200 calories and max water as well :)

  2. Wow - GREAT job on the cookies, Stephanie. I don't know that I'd be as strong-willed (even though I'd like to think I would). I'm glad I'm not alone in the 1200 calorie version.
